Fudgey Chocolate Cake

100g butter
175g caster sugar
75g brown or muscovado sugar
125g dark chocolate
1 tbsp golden syrup
2 large eggs
1 tsp vanilla extract
100g plain flour
½ tsp baking powder
2 tbsp cocoa powder



Heat oven to 180C/fan 160C/gas 4. Grease and line a 20cm cake tin.

Place the butter, both sugars, chocolate and golden syrup in the pan and melt gently on a low heat until it is smooth and lump-free.

Remove the pan from the heat, break the eggs into the bowl and whisk with the fork until light and frothy.

Add the eggs, vanilla extract or essence, flour, baking powder and cocoa powder to the chocolate mixture and mix thoroughly.

Put the mixture into the greased and lined cake tin and place on the middle shelf of the oven. Bake for 25 minutes.

Remove and allow to cool for 20-30 mins before cutting into wedges and serving.

I served my chocolate cake warm with homemade strawberry ice cream. It was divine! Although it is also good to bite into cold with no frills. This recipe is definitely a keeper!

Green Apple Fruit Cake

I have had this recipe for a long time, but I don't know where it came from. I didn't take note of where I got my recipes before I started blogging, so it is anybody's guess where it came from really. I adjusted the spices and fruit and measured the ingredients out in cups, to save time and I have to say that this is one great cake.

Green Apple Fruit Cake

200g butter ,softened
200g/ 1 ¼ cups demerara sugar
3 eggs , beaten
1 tbsp black treacle
200g/ 2 ½ cups self-raising flour, sieved
2 tsp mixed spice
2 tsp ground ginger
1 tsp baking powder
2 eating apples , grated (I used Granny Smith's)
300g/ 2 cups mixed dried fruit



Heat the oven to 180c/ fan 160f/ gas 4. Line a 8 inch round cake tin with greaseproof paper or a greaseproof liner.

Beat together the butter, sugar, treacle, eggs, treacle, flour and spices until the mixture is pale and thick. I popped my mixture in my food processor.

Fold in the fruit and spoon the batter into the cake tin. Bake for around bake for 1 hour and 50 minutes until the cake is golden brown. Do the skewer test. If it comes out clean it is ready. I have made this cake 3 times and the timing has been a little different each time. This could be to do with how big the apples are. If you are using a 9 inch tin, you won't need to cook it quite so long.

Leave to cool slightly in the tin and then move onto a wire rack to continue cooling.

APPLE CAKE -1

This apple cake, is one of our most popular because it tastes great and is VEGAN and Wheat-Free.
It was discontinued last year due to an ingredient, non dairy cream cheese which become unavailable from our supplier.

That disappointed many of our customers who really liked it’s gourmet quality and complex flavors.

But it’s back now and hopefully here to stay. The cake looks the same, and the taste difference with the new ingredient, tofutti, is negligible. Still available in any size and buy the slice.

Ingredient:
6 oz. Allinson fine wheat meal
6 oz. white flour
4-1/2 butter
1 - egg
1-1/2 lbs. of apples
1 teaspoonful cinnamon
3 oz. castor sugar
and a little cold water
Rub the butter into the meal and flour, beat up the egg and add it, and as much cold
water as is required to make a smooth paste; roll out the greater part of it 1/4 inch
thick, and line a flat buttered tin with it. Pare, core, and cut the apples into thin
divisions, arrange them in close rows on the paste point down, leaving 1 inch of edge
uncovered; sift the sugar and cinnamon over the apples; roll out thinly the rest of the
paste, cover the apples with it, turn up the edges of the bottom crust over the edges of
the top crust, make 2 incisions in the crust, and bake the cake until brown in a
moderately hot oven; when cold sift castor sugar over it, slip the cake off the tin, cut
into pieces, and serve.

Chocolate Apple Crisp

Ingredients:
3 Apples, unpeeled if desired, chopped
1 1/2 cup flour
1 1/2 cup of uncooked Quick oats
1 cup of brown sugar
1 cup Pecans or walnuts, chopped
3/4 cup Butter
1/2 teaspoon Baking soda
1/4 teaspoon Salt
1 packet semi-sweet chocolate mini morsels, divided (12 oz)

Preheat the oven to 375 degrees F. In large bowl, combine flour, brown sugar,
baking soda and salt. With 2 knives or pastry blender, cut in butter until
mixture resembles fine crumbs. Stir in oats; press half of oat mixture into
greased 13x9" baking pan. To remaining oat mixture, add Nestle Toll House
semi-sweet chocolate mini morsels, apples and pecans; stir to combine.
Sprinkle over base. Bake at least 35 minutes until lightly browned. Cool
slightly; cut into squares.

* 1 c Firmly packed brown sugar
* 1⁄2 T Baking soda
* 1⁄4 T Salt
* 3⁄4 c butter
* 1 1⁄2 c Quick oats, uncooked
* 1 pk NESTLE Toll House semi-sweet
* -chocolate mini morsels
* -divided (12 oz)
* 3 Apples, unpeeled if desired
* -chopped
* 1 c Pecans or walnuts, chopped

Cooking Chocolate apple crisp

1. Preheat oven to 375°F.
2. In large bowl, combine flour, brown sugar, baking soda and salt.
3. With pastry blender or 2 knives, cut in butter until mixture resembles fine crumbs.
4. Stiri in oats; press half of oat mixture into greased 13x9" baking pan. to remaining oat mixture, add nestle toll house semi-sweet chocolate mini morsels, apples and pecans; stir to combine.
5. Sprinkle over base.
6. bake 35-40 minutes until lightly browned.
7. Cool slightly; cut into squares.
8. makes about 15 servings.

Raisin Apple Crisp

Ingredients:
1 cup plus 3 tablespoons thawed frozen unsweetened apple juice concentrate, divided
1/4 cup uncooked old-fashioned oats
4 large cooking apples,* peeled, cored and sliced (about 6 cups sliced)
3/4 cup raisins
2 tablespoons cornstarch
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup all-purpose flour
1/4 cup cold butter or margarine
1/2 cup chopped walnuts or pecans (optional)


Preparation:
1.
Preheat oven to 375°F. Combine 3 tablespoons apple juice concentrate and oats; mix lightly. Set aside. Combine apples and raisins in large bowl; set aside. Combine cornstarch, 1-1/2 teaspoons cinnamon, nutmeg and salt in medium bowl; mix well. Blend in remaining 1 cup apple juice concentrate. Add to apple mixture; mix lightly to coat. Spoon into shallow 1-1/2-quart or 8-inch square baking dish. Combine flour and remaining 1/2 teaspoon cinnamon; cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Add oat mixture; mix lightly. Stir in walnuts, if desired; sprinkle evenly over apple mixture. Bake 35 minutes or until apples are tender. Serve warm, at room temperature or chilled.

3 Apples
1/4 cup Raisins
1/4 cup Chopped nuts
1/8 cup Water
3/8 cup Brown sugar
1/8 teaspoon Cinnamon
1/2 tablespoon Lemon juice
2 tablespoon Flour
2 tablespoon margarine
1/8 teaspoon Salt
Wash, pare, core and slice apples thinly. Mix with raisins. Place in a greased
casserole Add cinnamon, salt, lemon juice and water Work sugar, flour and
margarine (fat) together to form crumb like consistency Spread over apple
and raisin mixture Bake in 380 degree oven for at least 30 minutes.

Spicy Apple Crisp

Ingredients:
6 to 8 cooking apples
1 cup flour
1 1/2 cups brown sugar
3/4 cup butter
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 peel of one lemon
1 tablespoon fresh lemon juice

Peel, quarter and core cooking apples. Cut apple quarters into thin slices and
place it in a bowl. Blend nutmeg and cinnamon then sprinkle over apples.
Sprinkle with lemon rind. Add lemon juice and toss to blend. Arrange slices in
a large baking dish. Make a mixture of sugar, flour and butter in a mixing bowl
then put over apples, smoothing it over. Place the dish in the oven. If dish is
very full, put a pan under the dish to catch spills. Bake at 370° for 60 minutes,
until browned and apples are tender.

Apple Crisp Recipe

Ingredients
4 cup of Sliced Apples
1/3 cup All-purpose flour
1/2 cup brown sugar
1 cup oatmeal
1 teaspoon cinnamon
1 Tablespoon lemon juice
1/4 cup butter or melted margarine
Salt as necessary

Put Sliced Apples in a baking pan and Sprinkle with lemon juice. Combine all
dry ingredients with butter or melted margarine and mix with a fork until
crumbly. Sprinkle all this over apples and bake at 350 degrees for at least 30
minutes.
